Split Pea Soup
3 tablespoons olive oil
1 large onions, chopped
4 large carrots, chopped
4 celery stalks, chopped
4 cloves garlic, minced
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon red crushed pepper
8 cups Water
2 bay leaves
2 cups green or yellow split peas
Heat olive oil in large saucepan. Cook red crushed pepper and garlic for 30 seconds.
Add onions and cook for 5 more minutes. Add the rest of the ingredients and bring to boil.
Stir the soup. Lower the heat, cover, and simmer for 1-1/2 to 2 hours.
Yield: 8 to 10 servings
